Za’atar chicken with jewelled rice

Ingredients for the chicken:

1tbsp of Za’atar

1tbsp of sumac

1tbsp of garlic granules

season to taste

Ingredients for jeweled rice:

140g of long grain rice

600ml of vegetable stock

2 shallots finely diced

100g of mixed raisins and sultanas

30g of pomegranate seeds.

1tsp of sumac

1tsp of garlic granules

1tbsp of olive oil

salt and pepper to taste.

Method:

To begin with fry the shallots in olive oil under translucent. Once translucent add the raisins, sultanas, rice and sumac and coat.

Once coated add the stock and cook for 15 minutes.

Whilst the rice is cooking mix the ingredients for the Za’atar chicken in a mixing bowl and mix well.

Once mixed add the chicken to a frying pan and fry until cooked ( which should be 15-20 minutes)

Once the components are cooked place the rice on the bottom and then add chicken and pomnegranate.

We served this with a sumac yoghurt.
