Roasted superfood Medley
This meal is a quick delicious meal that is excellent for a vegetarian and vegan diet.
1 Butternut Squash
100 grams of Kale
20 grams of cashew nuts
2tsbp of Balsamic glaze
2tbsp of olive oil
1tbsp of dried oregano
1tbsp of dried basil
1tbs of garlic granules
Dice the butternut squash into small chunks and toss in a mixing bowl with the oregano, basil garlic and olive oil and season to taste.
Once the butternut squash is fully coated placing on a baking tray and cook for 30 minutes on 180C
Once the butternut squash has been in the oven for 30 minutes add sliced kale and mix in. Then cook for another ten minutes.
Once the kale and butternut squash is cooked take on and dish up. Once dished up, scatter with cashew nuts and add a generous amount of the balsamic glaze.
