Panzanella

This dish is great for when you are in a rush it only takes 10 minutes to make but tastes amazing. You could also add lardons or chicken if you would like meat with your meal.

Ingredients

400 grams of mixed cherry tomatoes

100 grams of black olives

Two Gluten Free ciabatta rolls ( Or any sort of bread)

50 grams of shaved parmesan

A good handful of basil leaves

1tbsp of granulated garlic

6tbsp of Extra virgin olive oil

A dash of balsamic vinegar glaze.

Method:

Cut the tomatoes anyway you like ( I cut mine into quarters). Cut the olives and basil and place it all into a bowl. Add the 4 Tbsp of he olive oil and season with salt and pepper and put to one side.

Add the rest of the olive oil to a frying pan, tear up the bread in to crouton size pieces and add to the hot frying pan and oil toast for a few minutes and add the garlic granules and keep int the frying pan until golden brown.

Now add the warm croutons to the rest of the ingredients in the bowl and mix well. Plate up, sprinkle with the parmesan shavings and drizzle with some balsamic vinegar glaze.
