
Quick and Easy Satay Chicken Skewers
Ingredients for the marinade:
300g of chicken
1Tbsp soy sauce
0.5tsp of sugar
Half a lime
Ingredients for the sauce:
4tbsp of peanut butter
200ml of coconut milk
3tbsp of sweet chilli
1tbsp of soy sauce
0.5tbsp of fish sauce
1tbsp of honey
1 lime squeezed
2tbsp of garlic granules
0.5tbsp of dried coriander leaves
Method:
To begin with marinade the chicken for 15 minutes.
Once the chicken is marinated put on skewers and place in the grill on high for 15 minutes turning every 5 minutes.
When the chicken is being grilled, you can make the sauce by adding all the ingredients and bringing to a simmer for 5-10 minutes.
Once the chicken is cooked your can either put the sauce on the chicken or have it on the side.
We served with sticky rice and had coriander as a garnish.
