Super indulgent Gluten Free Brownies
200g of butter
200g dark chocolate
85g of plain gluten free flour
40g of cocoa powder
275g of golden caster sugar
150g of white chocolate
150g of milk chocolate
To prepare heat the oven to 160C fan ( Gas mark 4) and then line a baking tin with baking parchment ( We used 20cm by 30cm tin.)
Cut the butter into cubes and tip into a heat proof bowl and break up the dark chocolate into pieces and place into the same bowl.
Place the bowl over a saucepan of hot water on low stirring occasionally until the butter and chocolate have melted and mixed together. Once melted take off the heat.
Whilst waiting for the chocolate and butter mix to cool, place the eggs and sugar into a mixing bowl and mix on high until light and fluffy. Then add the cooled chocolate and butter mix to the eggs and sugar and stir until incorporated.
Sieve the flour and cocoa powder into the chocolate mix and stir in.
Chop up the milk and white chocolate into chunks and stir into the brownie mixture.
Pour all of the mixture into the baking tin and put the tin into the oven for 25 minutes.
Once cooked take out of the oven to cool and then divide into squares
