
Gin and Tonic Mussels
Today we thought we would try our own recipe for mussels. We love gin and tonic and we love mussels, so we though why not put them together. These were great and it was nice to have the taste of gin. We furthermore indulged and had it with shallow fried squid.
Ingredients:
3cm of ginger
4 garlic cloves
2 shallots
80ml of Gin
150ml of tonic water
1kg of Mussels ( Washed and de-bearded)
1 lemon
1tbsp of Olive Oil
Method:
To begin with you need to make sure your mussels are cleaned and de-bearded and all shut, any of those that are not closing after a tap should be thrown away.
We then finely diced the shallots, ginger and garlic and fried in a saucepan with a tablespoon of olive oil until it was aromatic.
Once ready add the mussels and then pour the gin and tonic and a couple of slices of lemon into the saucepan and place the lid on for 7 minutes.
Once the 7 minutes is up check that the mussels are all open and plate up.
We had this with a side of Gluten Free Calamari, rocket salad and lemon mayo
