This recipe was inspired by out holiday in Pembroke shire where we had a great lunch of Cawl. This gave us thought of making our own. Which we served with our Gluten Free Scones.
600g Welsh Lamb Steaks, diced
1 tbsp of gluten free Flour, mixed with a pinch of salt & pepper
3 Large Potatoes, cubed and diced
2 Large Carrots, peeled & diced
0.5 Swede, peeled & diced
2 Parsnips, peeled & diced
3 Leeks, sliced
Salt and Pepper, to season
1tbsp of mixed herbs
To begin with mix the diced lamb in the seasoned flour and coat well. Once the lamb is coated add to a saucepan with a 1tbsp of olive oil and cook until the lamb is browned.
Once the lamb is browned add the potatoes, carrots, parsnips and swede and pour in 2 litres of water and cook for 1 hour and 40 minutes on a low heat with the lid on to simmer.
Once the cawl has been cooking for an hour and 40 minutes add the leeks and cook for another 20 minutes.
Once the cawl is cooked season to taste and add the mixed herbs.
We served our Cawl with homemade skins and cheese
