
Prawn Thai Green Curry
Ingredients for the paste:
2 lemongrass sticks ( diced)
2 shallots
2tbsp of sweet chilli sauce
6 kaffir lime leaves
1tbsp of galangal
1tsp of cumin
1 squeezed lime
10g of coriander
3 garlic
4cm of fresh ginger
1tsp of fish sauce
3tbsp of olive oil
Ingredients for the curry:
200g of prawns
1 shallot
2cm of fresh ginger
400ml of coconut milk
2tbsp of sweet chilli
4 kaffir lime leaves
1 lime squeezed
100g of green beans
10 mini corns
1tbsp of galangal
Method:
To start with, prepare all of the ingredients for the paste by dicing the lemongrass, shallots and garlic. Once the ingredients are diced place all the ingredients for the paste into a food blender and mix until it is smooth paste.
For the curry fry the shallots and ginger in a small amount of olive oil for 2 minutes or until the shallots is translucent.
When the shallots are translucent add the curry paste and stir for a minute before adding the coconut milk, sweet chilli, kaffir lime leaves and lime and cook for 2 minutes.
Once this is done add the prawns, corn and green beans to the sauce and cook for a further 10 minutes.
Once this is done plate up and serve with rice and lime wedges
