Homemade Gluten Free Pasties
This will make 5 large pasties or 8 smaller pasties
Ingredients for pastry:
300g of gluten free plain flour
150g of cold diced butter
1.5tsp of xanthan gum
1tsp of salt
2 egg
2 table of ice cold water
Ingredients for filling:
500g of beef ( finely diced)
3 potatoes
1 onion
1/3 of a swede.
1tsp of salt
1.5tbsp of pepper seasoning
Method
In a bowl mix the xanthan gum and flour until incorporated and then add the cold butter. Once this is done mix together to make a breadcrumb like mixture. Add the salt and mix. Then add the egg, use a knife to mix all ingredients. Then add 2tbsp of cold water, continue to mix with the knife until the mixture becomes a dough, which should be slightly sticky
Transfer from mixing bowl to clingfilm and chill in the fridge for an hour.
Whilst the pastry is chilling finely dice the potatoes, onion and swede in 1cm cubes and then place in a mixing bowl. Once in a mixing bowl add the salt and pepper.
Once the pastry is out of the fridge roll to half a centimeter thick using a small side plate to cut around.
Once you have cut around the sauce, egg wash one side of the pastry and add the filling before folding over and crimping ( Either on top or on the side)
Once this is done place in the fridge for another 20 minutes.
When the Pasties are chilled place an egg wash on top before place in the oven for 25 minutes on 180C.
