
Rice burgers with Asian style fried chicken
This recipe will make four burgers.
Ingredients for rice burgers:
250g of sushi rice
300ml of cold water
Ingredients for Chicken
4 chicken thighs
2tbsp of tamari soy sauce
0.5tbsp of rice vinegar
1tbsp of mirin
1tbsp of sherry
1tsp of garlic puree
2tsp of ginger puree
1tbsp of honey
100g of gluten free plain flour
100g of potato starch
Ingredients of mayonnaise:
100g of Mayonaisse
1tbsp of honey
1tsp of Dijon mustard
1tsp of horseradish
1tsp of miso paste
Method:
To begin with marinade the chicken with all of the ingredients for the marinade and place in the fridge for an hour.
Whilst the chicken is marinating, prepare the sushi rice by following the method on the rice packet.
Once the rice is cooked and slightly cooled. Separate into 8 equal portions and press into a circular shape ( We used a circular jar and clingfilm for this.) Make sure that you compress the rice well, so the rice sticks together.
Once all 8 are pressed out place in a hot oiled frying pan and cook on each side for 5 minutes on a low heat and until golden brown.
Once cooked place to cool and make the mayonnaise by mix all ingredients together.
After all other components are ready take the chicken out of the fridge and coat in the flour and potato starch making sure you fully coat.
Once fully coated place in a saucepan with 2inches of hot vegetable oil and cook for 5-6 minutes turning every now and then.
Once all the chicken is cooked you can plate your meal putting one rice bun on the bottom before adding the chicken and mayonnaise before adding the other bun.
