Gluten Free Broad Bean and Feta toast

Ingredients:

250 Grams of Broad Beans

80 Grams of Feta

4 Slices of Gluten Free Bread ( We used GF sourdough)

1 Clove of Garlic

A nob of butter

2 tbsp of olive oil

10ml of cream

A handful of mint leaves

2 tbsp of mint seasoning

Method:

To begin with we cooked the broad beans in boiling water for 10 minutes.

Whilst the beans were cooking we drizzled the slices of bread with oil on both sides and placed in the grill for 2 minutes each side. ( Until toasted)

Once the bread was toasted we rubbed the garlic onto both sides of the toast.

Once the Broad beans were cooked we drained them and placed them back into the saucepan, where we added the nob of butter, mint seasoning, mint leaves and cream and crushed.

Once the broad bean mixture was ready we piled onto the toast and crumbled feta over the top and dressed with the remaining olive oil and mint leaves.
