Spicy Tomato Seafood pasta


1 tin of chopped tomatoes

3 shallots (diced)

2 Tbsp olive oil

3 Tbsp tomato puree

3 tsp of sugar

2 Tbsp sweet chilli sauce

3 cloves of garlic

1 Tbsp of dried basil

1 red wine stock pot

300g of GF spaghetti

300g seafood mix

15g grated parmesan


To begin with heat the olive oil in a saucepan, then dice the shallots and put them in.

Once the shallots are translucent add the sugar, dried basil, garlic and tomato puree and cook on medium for 2 minutes.

Now add the tin of chopped tomatoes and add 200ml of water and continue to cook for 10 minuets.

Once the sauce is thick add the sweet chilli and the seafood mix and continue to cook for a further 5-8 mins.

Whilst you are cooking your sauce put a pan of salted water on to boil and cook the GF spaghetti following the instruction on the packet. Once the spaghetti is cooked it is time to plate up and enjoy with a sprinkle of grated parmesan.
