Gluten Free Gin and Tonic Fish goujons

This recipe is a firm favourite of ours and we used frozen pollock ( De-frosted) from Morrisons ( £1.89 for 400g) It worked perfectly and is a cheap alternative to going to the fish shop.

Ingredients:

400g of Pollock

200g of gluten free self raising flour

50ml of gin

100ml of tonic water

A pinch of salt

1 litre of vegetable oil for frying

Method:

To begin with pre- heat the oil in a large heavy based saucepan or deep fat fryer.

Whilst the oil is heating, whisk together the flour, salt, gin and tonic water, so it creates a thickish batter.

Once the batter is made, dust the fish with a little gluten free flour and then coat each piece of fish with the batter.

Once the oil is hot place the battered fish in batches gently into the hot oil and cook for 3 minutes until golden brown.

Once cooked drain any remaining oil with kitchen roll and season to your liking.

We served ours with homemade oven chips and a slice of lemon.
