
Thai Chicken Basil
This is a great quick meal full of flavour and will only take you 30 minutes to make. This would feed 4 people.
Ingredients:
2tbsp of olive oil
2 shallots
3cm of ginger
3 garlic cloves
700 grams of chicken
2 tbsp of gluten free Shaoxing wine
3 tbsp of tamari or GF dark soy sauce
1tbsp of mirin
0.5 tsp of fish sauce
4tbsp of sweet chilli sauce
1 little gem lettuce
15 grams of Thai holy basil
Method:
To begin finely dice the ginger, shallots and garlic and cook in a frying pan for 3 minutes with cooking oil.
Once you have cooked the ingredients for 3 minutes, add the chicken until cooked ( This should take 10 minutes.)
Once the chicken is cooked add the Shaoxing wine, tamari, mirin and sweet chili and cook until the sauce has thickened.
Once your sauce has thickened add the Thai holy basil and stir until covered.
Once the dish is cooked pour onto the little gem lettuce.
