Gluten Free Chicken Kiev
This recipe feeds two people and was inspired by our visit to a garlic festival.
2 chicken breasts
150 of gluten free breadcrumbs
75g of gluten free plain flour
125g of salted butter
2 garlic cloves grated
2tsp of dried oregano
To begin with make the garlic butter by mixing the room temperature butter, dried oregano and grated garlic in a bowl and place in a small piping bag.
When this is done prepare the chicken by piercing a whole in the thicker end of the chicken breast, creating a cavity for the garlic butter. Then pipe in the garlic butter half in each of the chicken.
Once the chicken has been piped place in the fridge for the butter to set for 30 minutes.
Then place the chicken in seasoned flour, then egg, then breadcrumbs and do this for both.
Once both Chicken breasts are coated place in the oven for 25-30 minutes dependant on the size of your chicken breast.
We served ours with Garlic green beans and new potatoes
