This dish was great for a sunny spring day, it was nice and light but full of flavour.
1 cauliflower ( We had 2 steaks of 1 inch each)
2tbsp of sumac
2tbsp of oil
1 red onion
10 sundried tomatos
10 silverskin onions
1tbsp of sugar
Salt and pepper for seasoning.
To begin with we sliced the cauliflower into 1 inch steaks and rubbed in oil and sumac on both sides.
We then placed in the oven on 180C for 40 minutes.
Whilst this was cooking we diced the tomatoes, garlic, sundried tomatoes, silverskin onions and red onion and placed into a frying pan. We then fried for 10 minutes and sprinkled 1 tbsp of sugar, stirring in before for plating up.
We then plated the cauliflower first before putting the tomato mixture on as a side.
