
Thai inspired sea bass
Ingredients for the sea bass:
1 Sea bass ( Gutted)
thumb size of ginger
1 garlic clove
1 spring onion
3 slices of lime
1 stick of lemongrass
Ingredients for the glaze:
1tbsp of tamarind paste
1tbsp of sweet chilli
1 squeezed lime
Method:
Begore you begin put the oven on a heat of 200C
To begin with finely dice the ginger, garlic, spring onion, lime wedges and lemongrass and place in the cavity,.
Once the cavity is full create your glaze by add the ingredients into a small bowl and mix well.
Once the glaze is created use a pastry brush and brush both sides of the fish.
Once the fish is prepared place in parchment paper and then foil and place in the oven for 25 minutes.
After 25 minutes take the fish out and put under the grill for 3 minutes each side until the skin is crispy.
Once the skin is crispy plate the fish and have with a side of your choice, we had a pomegranate salad.
