
Loaded Corn Ribs
Ingredients:
4 cobs of corn
10 cherry tomatoes
1 ball of mozzarella
half a cucumber
a handful of coriander
1 lemon squeezed
3tbsp of olive oil
1tbsp of garlic granules
1tbsp of paprika
salt to taste.
Method:
To begin with quarter each cob lengthways to make ribs shapes.
Once the corn is cut place in a mixing bowl and season with paprika, 2tbsp of olive oil, salt and garlic granules. Once coated put in the airfryer on a heat of 200C for 15 minutes (or in the oven at 180c for 20 minutes), turning half way through.
Whilst waiting for the corn, dice the cucumber, mozzarella and tomatoes and mix together adding the coriander and lemon.
Once the corn is cooked place in a bowl and add the mixed vegetables. We dressed ours with sweet chilli and siracha but you can use any sort of dressing.
