
Quick and Easy Spiced Paneer
This quick and easy recipe will feed 2-4 people and is great for a nice light and refreshing meal.
Ingredients:
2tbs of olive oil for frying
500g paneer , cut into bite-sized pieces
1 tbsp of ground coriander
knob of ginger , peeled and diced
1 medium red onion , diced
2 cloves of garlic diced
10 cherry tomatoes , diced
1 sweet red pepper diced
3 tsbp sweet chilli sauce
1 tbsp garam masala
1 tbsp clear honey
To garnish:
small handful of fresh coriander , chopped
3 spring onions , finely shredded
Method:
To begin with heat the olive oil in a large frying pan and fry the paneer in batches until golden brown, watch out for the oil as it spits. Once golden brown scoop it on to kitchen paper.
In the same pan as the paneer fry the , ginger, onion, garlic and pepper for about 3 minutes. After 3 minutes tip in the tomatoes with the rest of the spices, sweet chilli and honey.
Once the mixture is cooked tip the paneer into the sauce and stir. Simmer for a few minutes.
Once cooked, plate in a bowl, garnish and serve with poppadoms and a wedge of lime.
