
Gluten Free Apple Pie with Lattice
This apple pie can produce 6-8 slices.
Ingredients for pastry:
400g of gluten free plain flour
200g of cold diced butter
2tsp of xantham gum
60g of caster sugar
2 egg
4 table of ice cold water
Ingredients for the filling:
6/8 Large cooking apples peeled and sliced
140g cooking apples
2 tsp cinnamon
1 tsp of ground ginger
4 Tbsp of cornflour
2 Tbsp of butter
Method for pastry:
In a bowl mix the xanthan gum and flour until incorporated and then add the cold butter. Once this is done mix together to make a breadcrumb like mixture. Add the sugar and mix. Then add the egg, use a knife to mix all ingredients. Then add 2tbsp of cold water, continue to mix with the knife until the mixture becomes a dough, which should be slightly sticky
Transfer from mixing bowl to clingfilm and chill in the fridge for an hour.
Roll out two thirds of the pastry and transfer into the pie dish with baking beads and bake on 170 fan for 15 minutes. Take out of the oven and let it cool.
For the filling place all the ingredients apart from the butter in a bowl and mix well so all the apple pieces are coated, Then transfer to a colander and allow some of the fluid to drain off.
Place the mixture into the pie base. Roll out the last 3rd of the pastry out and cut into 10/12 strips. Make a lattice pattern on top of the pie and brush with a egg wash. Place the pie in the oven on 170 fan for 35/40mins. Once cooked take out of the oven and leave to cool. Enjoy with some fresh cream or custard.
