
Onion soup with Gluten Free Gruyere croutons
This soup serves two people and is great with a glass of white wine.
Ingredients:
8 medium brown onions
450ml of beef stock
250ml of white wine
3tbsp of brown sugar
10 dashes of Gluten Free Worcester sauce
2tbsp of garlic granules
1tbsp of olive oil
3tbsp of gluten free marmite ( We used Asda’s yeast extract)
4 twists of the pepper shaker
8 pieces of white bread
15og of gruyere
Method:
To begin with slice 8 onions so they are almost in half crescent pieces.
Once sliced place in a saucepan with the 1tbsp of olive on a medium heat for 5 minutes or until the onions have sweated.
When the onions have sweated add the garlic granules and sugar and then leave for another two minutes.
Once the onions are caramelised add the beef stock, wine, Gluten free Worcester sauce and yeast extract and leave on a medium heat for 20 minutes.
Whilst waiting for the onion soup, grate the gruyere cheese and then cut your GF bread in to circles and place the cheese on top.
Once the bread is cut into circles, drizzle with olive oil and place in the grill for 2 minutes before adding the cheese for another 2 minutes. Once done leave to place on top of the onion soup.
Once the soup has been simmering for 20 minutes add the croutons in the soup and then place under the grill until the cheese is golden brown.
