
Quick and Easy Shan Noodles
Ingredients for the Shan noodles:
300g of chicken ( Diced)
200g of rice noodles
10 vine cherry tomatoes
2tbsp tamari sauce
3tbsp of Chinese five spice
2tbsp of tomato puree
2tbsp golden caster sugar
3tbsp sweet chilli
20g of crushed peanuts
Ingredients for the pickled veg:
1 large carrot
1 red onion
half a cucumber
2tbsp of sugar
1tbsp of honey
3tbsp of white wine vinegar
1 squeezed lemon
Method :
To begin with julienne the carrot and cucumber and place into a jar, after you have done this cut the onions into rings and place in the same jar.
In a small saucepan put the honey, sugar, white wine vinegar and lemon and cook for 2 minutes. Once you have done this pour over the mixture in the jar and place to one side.
For the sauce slice the shallots, garlic and ginger and finely and cook for 2 minutes. Once the shallots are translucent add the diced chicken and cook for 10 minutes.
Once the chicken is cooked add the chopped tomatoes with the tamari sauce, Chinese five spice, sweet chilli, tomato puree and caster sugar and cook for 15 minutes.
For the rice noodles, boil the rice noodle per packet instructions and then strain them.
To serve put the noodles on the bottom before place the chicken and sauce and garnish with peanuts and coriander and the pickled vegetables.
