This dish is not for the faint hearted with lots of rich flavours such as cream and milk, it was great for a treat.
250g long grain rice
2 Tbsp of korma curry paste
100ml double cream
300g natural smoked haddock
Small bunchCoriander chopped
Salt and pepper
3 soft boiled eggs
To serve knob of butter
To begin with cook the onion gently in the butter for a few minutes in a saucepan, and then add the rice.
Once the rice is added continue cooking gently and stirring, adding the curry paste .After a few minutes, add the milk, cream and the water to the saucepan.
When the mixture begins to simmer, add the fish and continue simmering, stirring occasionally until the rice is cooked. If your mixture looks dry you can always add more water.
Once the rice is cooked Add the eggs and garnish with coriander and a knob of butter.
