Melon and Halloumi Summer Salad

Melon and Halloumi summer salad

This light salad will serve two people.

Ingredients:

1 Honeydew Melon

225g of Halloumi

150g of broad beans

small bunch of mint finely diced

1 knob of butter

1tbsp of garlic granules

2 plums

1tbsp of sweet chilli.

Method:

To begin with slice the melons, mint and plums and place in to a mix bowl.

Boil the broad beans in a saucepan for 3 minutes before draining and cook in a frying pan for 3 minutes with the butter and garlic. Once the broad beans are cooked place them into the mixing bowl.

Once you have done this, cook the halloumi in a griddle pan until golden brown. ( 3-5 minutes)

Once the halloumi is cooked place in the mixing bowl and mix all the ingredients.

Once all the ingredients are mixed place in a bowl and drizzle the Sweet Chilli over the top.
