
Birthday Cupcakes
This easy cupcake recipe is great for celebrations and can make 18 cakes
Ingredients:
225g of Gluten Free self raising flour
225 g of caster sugar
4 eggs
225g of melted butter
1tbsp of vanilla essence
Ingredients for butter icing
250g of soft butter
700g of icing sugar
1tbsp of vanilla essence
2tbsp of milk
1/4tsp of 0range and yellow concentrated food colouring
Method:
Preheat the oven to 160c and put 18 muffin cases into a muffin tin.
Mix the flour, sugar, butter, eggs and vanilla essence in a large bowl and mix in a mixer for 2 minutes on high
Once the mix is lump free divide between 18 cupcake cases evenly and place in the oven for 22 minutes.
Once cooked take the cakes out of the oven and place on a cooling rack.
Whilst the cupcakes are cooling add the icing sugar, butter, vanilla essence, milk and mix in a food mixer until light and fluffy.
Once the icing is done separate in two bowls add your food colouring and then mix well
Once the cupcakes are cool place the butter icing into a piping bag and decorate the cupcakes.
