
Pork Adobo with Pineapple
This feeds two people
Ingredients:
2 large slices of pork belly ( diced into cubes)
4 garlic cloves
2cm of ginger diced
2 shallots
1 large pineapple
3tbsp of olive oil
60ml of cider vinegar
60ml of soy sauce ( we used tamari as its GF)
2tbsp of sweet chilli
3tbsp of sugar
2tbsp of honey
3 bay leaves
A handful of peppercorns
250ml of water
Method:
To begin with slice the pork into cubes and cook in a saucepan with 2tbsp of olive oil until the pork starts going golden brown, which takes 5-8 minutes.
Once the pork is starting to brown add the shallots, ginger and garlic for 2 minutes or until the shallots are translucent.
When the shallots are translucent and the pork golden brown add the soy sauce, sugar, honey, cider vinegar, sweet chilli, bay leaves, peppercorns and 250ml of water and cook for 50 minutes on a low heat.
With ten minutes left on your timer for the pork, slice your pineapples and cook in a frying pan with the 1tbsp of olive oil until golden.
Once your pineapple is brown add to the pork and sauce and cook for another 15 minutes.
Once the 15 minutes is complete plate up and serve with the side of your choice. We chose Jasmine rice.
