
Loaded Polenta Fries
Ingredients:
For the Polenta fries
150 grams of Polenta
450ml of vegetable stock
20 gram of grated cheddar cheese
For the Chorizo:
A chorizo ring sliced up
100ml of red wine
1tbsp of honey
The zest of one orange
For the Verde Sauce:
2 garlic cloves
4tbsp of olive oil
0.5 tsp of cumin
1tsp of smoked paprika
1tsp of sugar
1 squeezed lemon
10 grams of coriander
Method:
To begin with bring the stock up to boil, once boiling add the polenta and whisk continually until thickened. Once this has happened take off the heat and add the chees and stir in. Pour the polenta into a line baking tin and leave to cool for 40 minutes. Once cooled turn out the polenta and cut into fries. Place the polenta fries onto a baking tray and drizzle with olive oil and sprinkle extra polenta to make it crispy.
Place the polenta fries in to the oven at 180c for 30 minutes.
Whilst the polenta fries are in the oven, slice the chorizo ring into 1cm circles, place into a saucepan with a teaspoon of olive oil and cook until golden on both sides. Once the chorizo is golden add the red wine, orange zest and honey and cook for a further 5 minutes until the wine is thick.
For the Verde sauce add all ingredients into a blender and blend well.
Once the polenta fries are cooked, place on a plate and then add the chorizo and verde sauce.
We added garlic mayonnaise as Lara loves this 🙂
