Halloumi and Peach Panzanella

Halloumi and Peach Panzanella


200g of Bread cut into 1cm cubes

5 Tbsp of Olive Oil

1 Tbsp of Garlic Granules

1 Tbsp of Dried Basil

4 Peaches into segments

225g of Halloumi sliced into fingers

250g of Mozzarella shredded

2 Little Gem Lettuces

A handful of fresh basil

1 Tbsp of balsamic glaze


For this dish it is best to prepare the ingredients first as most components are cooking at the same time

To begin with, slice GF bread into 1cm cubes and put it into a frying pan with the Olive Oil, Garlic Granules and Dried Basil. Fry the bread for 5 minutes or until golden.

Whilst the GF bread is frying place the peach segments into a griddle pan and cook until golden brown this took roughly 5 minutes aswell.

At the same time as frying the peaches, place the Halloumi fingers into a frying pan and cook for around 8 minutes.

When all is cooked, slice a Little Gem Lettuce into 4 and place a the bottom of the plate.

Shred the Mozzarella and place on top of the Little Gem Lettuce.

After this, arrange the rest of the ingredients to your liking. Then add Fresh Basil and Balsamic Glaze.
