

Gluten free Popcorn Chicken Banquet
Ashley really fancied a KFC the other day and we both fancied one at the weekend. However KFC is not gluten free so we decided to make our own version using an Asian style popcorn chicken and Smokey BBQ beans
Ingredients for the chicken:
800g chicken breast, cut into cubes
2 tbsp light soy sauce ( We used tamari)
1 tbsp Chinese shaoxing wine ( You could use sherry)
1 egg white, lightly whisked
150g of gluten free plain flour
2tbsp of cornflour
1tbsp of oregano
1tbsp of basil
2tbsp of garlic granules.
Ingredients for the beans:
1 tin of cannellini or haricot beans
150ml of vegetable stock
3tbsp tomato puree
3tbsp of tomato ketchup
1.5tbsp of bbq sauce
2tsp of paprika
2tbsp of balsamic vinegar
1tbsp of honey
Ingredients for side:
Shop bought coleslaw ( Although you can make your own)
150g of chips
4 corn on the cob.
Method:
To begin with we made the beans by pouring the ingredients except the beans in to a saucepan and cooked for 2 to 3 minutes. After 2 to 3 minutes we then added the cannellini beans and cooked for enough 5 minutes or until warm, we then place to one side ready to heat up when we were ready.
After this we marinated the chicken in the shaoxing wine, egg and tamari for 30 minutes.
Once your chicken has been marinated for 30 minutes, put flour, cornflour and the seasonings in to a mixing bowl and then pour the chicken and the marinade into the bowl. Mix well so all the chicken is covered in a light batter.
Once the chicken is covered shallow fry the chicken in a saucepan of oil in batches for 4-5 minutes or until cooked throughout.
Whilst you are cooking the chicken you can place the chips in the oven and prepare your sides.
Once all complete plate your meal up and enjoy.
