
Summer Taco Bowl
This recipe will feed 2-3 people and works well with a nice glass of wine.
Ingredients:
500g of beef mince
2 mangoes
2 shallots
10-15 cherry tomatoes
Handful of Coriander
2 lemons
1tbsp of rice wine vinegar
A bag of tortilla chips of your choice.
Spices for Beef mince:
2tbsp of paprika
2tbsp of garlic granules
1tbsp of honey
1tbsp of cumin
1tbsp of ground coriander
Method
To begin place the beef mince in a saucepan with a dash of oil ( We used olive oil) and put on a medium heat and let it brown.
Whilst waiting for the beef mince to brown, slice the mango, cherry tomatoes and shallots into a bowl and then add the juice of the lemons, rice wine vinegar and coriander and put to one side.
Once the mince is browned add the spice and cook for another 3-5 minutes.
Once the mince is cooked. Place the tortilla chips into a bowl and then add the mince and the mango salsa
