GF Crunchy nut honey and sweet chilli chicken

Gluten Free Crunchy nut honey and sweet chilli chicken

This recipe could feed between 2-3 people and is a healthier alternative than deep frying the chicken.

Ingredients for the chicken:

600g of chicken ( cut into mini fillets)

300g of Gluten Free crunchy nut conflakes

2 eggs

100g gluten free flour

Ingredients for honey and sweet chilli sauce:

1.5 cups of honey

1.5 cups of sweet chilli

0.5 cup of soy sauce

Method:

To begin with prepare a three bowls. One with two eggs whisked, one with flour (We seasoned ours with salt and pepper) and one with crunched up Gluten free crunchy nut cornflakes.

Once the bowls are ready place the chicken in small batches in the flour first, then the egg and then the cornflakes. Once coated place on a oiled baking tray and place in the oven for 25 minutes on 180c ( However this may very on the size of your oven)

Whilst the chicken is in the oven, place the sweet chilli, honey and soy sauce into a saucepan and set on a high heat for 3-5 minutes or until the sauce thickens and then put to one side

Once the chicken is cooked place in a bowl and add the sauce.

We enjoyed ours with crispy kale ( You can find the recipe on our blog) and salt and pepper chips.
